Blue Sparrow Coffee is Opening a Second Location on Platte Street

 

In April of 2017, Blue Sparrow Coffee opened its first location in RiNo. Since, the small space has gained attention across the city as a beloved craft coffee cafe and one of Denver’s only providers of ready-to-drink CBD coffee, among its many other memorable offerings. And now, its expanding. The petite 470-square foot cafe will open a second location on Platte Street, offering the same unique fare that its first location  — with the addition of some awesome upgrades.

“We’re going to run out of space, and fast.” Explained owner Jeffrey Knott. “We’re a very small coffee shop. We would hate to miss out on building relationships with our neighbors simply because of square footage. It’s really a way to expand our current offering to meet demand — although we’re sticking to the business model of less is more and Blue Sparrow Platte won’t be much bigger.”

Blue Sparrow is the first coffee shop that Knott opened on his own — though he did assist in numerous openings across the city from Fluid to Thump, Novo and Prodigy. And he took a few things from those experiences: the importance of variety and novelty. By featuring a new roaster from around the world each week and offering drinks like CBD coffee, Japanese iced coffee and local kombucha, on tap — Knott offered his customers an array of coffees and some uncommon options. And his next shop on Platte will stay true to that. In addition to the unique offerings and rotating roasters, he’s made an effort to partner with local food providers like La Filette, Rebal Bread and Genova’s Biscotti to provide patrons with a spread of local bites.

“Although we’ve only been around one year, I’ve had years in the industry writing, revising and fine-tuning menus.” Explained Knott. “Our current menu has changed very little from day one, and I expect our new locations menu will be identical. We’re going to continue to partner with roasters from around the world to bring a curated offering to Denver like no other. We will also have all of our favorites, Strava CDB Nitro Cold Brew, Japanese Iced Coffee, Organic matcha in pretty any way you can imagine it.”

The new location will open Spring of 2019 in the recently completed Circa Building located at 1615 Platte Street, Denver.
