Ask Modmarket founders Rob McColgan and Anthony Pigliacampo whether they could eat at their restaurants every single day, and the answer is an unqualified yes—not only because they both do, in fact, have at least one or two meals there each day, but also because they’ve designed the menus with their own tastes and quality demands in mind. And at their newest location in Greenwood Village—in a shopping plaza handily sharing space with Sunflower Market—they’ve decided to implement breakfast in addition to Modmarket’s regular lunch and dinner menu. With sandwiches made on Udi’s ciabatta, such as the “Rocket Egg” (cage-free eggs, basil aioli, arugula, tomato and provolone) and the “Chipotle Egg” (cage-free eggs, hormone and antibiotic–free bacon, chipotle aioli, tomato and provolone), as well as a variety of frittatas served with toast, Modmarket is applying its real-food philosophy to wonderfully satisfying options for your morning meal. So put down that soggy Egg McMuffin—a much happier breakfast in Greenwood Village now awaits.
