Johnny Ballen, co-owner of the Squeaky Bean in LoDo is set to open his latest venture, Cochino, in Englewood next week. The Mexican restaurant brings tacos, salads and burgers as cocktails, beer and a signature Pinot Gris. Ballen, an Englewood resident of 15 years, fulfills a neighborhood need for a more culinary-forward option in what is otherwise a restaurant desert.
The 83-seat restaurant has a bar area, custom-made tables and community tables with an additional 48 seats on the patio. Details in the Cochino design are mainly comprised of repurposed woods and refurbished pieces Ballen handpicked, giving it a personality and sense of home.
As for the name, Cochino is a Spanish translation of “pig,” so you can guarantee there is plenty of pork on the menu. The cocktail program is whiskey- and tequila-centric with about seven cocktails and frozen drinks as well. When Cochino is fully up and running, it will be open daily for lunch and dinner with brunch on the weekend.
