Am I really talking about summer foods again? Why, yes. Yes, I am. But this time I’m featuring summer’s starlet: fresh corn.
The first appearance of this husked starchy veggie signals the beginning of summer — and while we are in the dead center of the season now, it’s still a staple on my grocery list. While it seems elementary and simple, the bright flavors of sweet corn can be easily highlighted by tossing a few cobs on the grill along with some burgers. The hot flame allows the natural sugars in the corn caramelize, creating a unique nutty flavor. By pairing that natural tastiness with some bright and fresh summer ingredients, fresh corn on the cob makes the leap from mundane to divine.
Fresh Corn and Goat Cheese Salad
2 ears of fresh corn
one firm and ripe tomato, diced
2 oz goat cheese, crumbled
juice from half a lemon
salt and pepper to taste
Season corn with salt and pepper and wrap in aluminum foil. Cook 10 minutes on a grill over high heat, rotating with tongs every few minutes. Take corn off the grill, unwrap and let cool. When corn has cooled completely, cut kernels off the cob using a knife. Mix in the chopped tomato, lemon juice, and goat cheese. Season with salt and pepper.
This salad can be served either warm or cold. Option garnishes: fresh thyme, basil or dill.
