Denver’s iconic ice cream shop has partnered up with the Hampton Water Wine Co., whose brand founder, Jon Bon Jovi, melted the hearts of many now Gen X high school girls back in the day.

This pairing of wine and ice cream had us intrigued and desiring to learn more. We were able to with Adrian Simon, co-owner of Bonnie Brae Ice Cream, to find out the inspiration behind this partnership and what innovative flavors you can expect from them in the future.
303 Magazine: The announcement of this limited-time flavor collaboration is going to make a lot of Gen Xers happy. What inspired the partnership with Hampton Water Wine Co. for the Strawberry Rosé Sorbet and is this something that people can expect going forward, either with Hampton Water Wine Co. or other wine and spirit brands?
Adrian Simon: We’re always looking for ways to bring something fresh and fun to Denver, and the idea of collaborating with Hampton Water was an easy “yes” for us. Their rosé is iconic, and pairing it with our housemade sorbet just made sense—it’s refreshing, nostalgic, and has that grown-up twist that’s perfect for summer.
As for future collaborations, this is definitely something we’re open to exploring further, both with Hampton Water and other beverage brands that align with our quality and creativity. We’re excited about our ongoing collaboration with 7Cellars, featuring a delicious cabernet and nutella flavor. Plus, we’ve got a new partnership with Casa Noble Tequila on the way! Keep an eye out for this flavor launching just in time for Cinco de Mayo and the summer season.
303: With summer around the corner and various events taking place during this time, the Strawberry Rosé Sorbet is sure to become a summer favorite. Are you able to share the recipe, and where people can find the ingredients?
AS: We love that people are excited about it! It’s made with fresh strawberries and Hampton Water Rosé, blended to perfection. If you’re inspired to make your version at home, start with strawberries (fresh or frozen), sugar and your favorite rosé—Hampton Water is our pick, of course.
303: Are there any plans for future flavors in the works?
AS: Absolutely. We’re always dreaming up new seasonal flavors and collaborations, especially as we head into our busiest time of year. We don’t want to spoil the surprise, but let’s just say this summer’s lineup has something for everyone. One highlight: a fun new tequila flavor dropping soon in partnership with Casa Noble Tequila!
