A Weeklong Launch Celebration: Complimentary Side-by-Side Tastings

PARC Aspen, widely recognized for its seasonally inspired cuisine and distinguished as Aspen’s Best Restaurant and Best Cocktail List, proudly unveils the second edition of its exclusive Single Barrel Bourbon, crafted in collaboration with the acclaimed Roaring Fork Valley distillery, Woody Creek Distillers.

Following last year’s celebrated 8-year Bourbon, this year’s release features an exceptional 11-year, Bottled-in-Bond Single Barrel Wheated Bourbon, crafted from Colorado-grown corn, wheat, and malted barley and aged in American white oak with a No. 3 char. The bourbon showcases a deep amber color,  full-bodied palate with notes of cooked apple, oolong tea, and green peppercorn, and a long, warming finish—a profile shaped by over a decade of patient aging and small-batch precision.

A Weeklong Launch Celebration: Complimentary Side-by-Side Tastings

To celebrate the unveiling of this year’s 11-year bourbon, PARC Aspen will offer complimentary side-by-side tastings of both the 8-year and 11-year expressions with the purchase of dinner in the bar or dining room from December 17 through December 22.

Guests are invited to explore the evolution of the collaboration barrel-to-barrel, discovering how time, grain composition, and aging shape two very distinct yet harmoniously crafted bourbons.

The 11-year Single Barrel Bourbon, as well as the 8-year Single Barrel Bourbon, will be available exclusively at PARC Aspen, offered neat, on the rocks, or paired alongside seasonal dishes created to complement its flavor structure.
