Denver’s culinary scene is experiencing a renaissance, with a growing number of private chefs crafting personalized dining experiences that are both intimate and extraordinary. Among these culinary artisans is Chef Blake Stine, owner and operator of Denver Private Chef. With a background shaped by the Art Institute of Colorado, Chef Stine has become renowned for his ability to transform fresh, local ingredients into exquisite dishes tailored to his clients’ preferences.

Earlier this year, we had the privilege of accompanying Chef Stine to an intimate dinner he curated for a couple from Ohio. Having relocated to Denver, they had become avid supporters of Chef Stine’s culinary artistry in no time, inviting him into their home on multiple occasions to craft personalized dining experiences. “Every dish tells a story, and tonight’s menu is all about warmth and welcome, just like Denver,” Chef Stine explained. Their warmth and enthusiasm were palpable as they recounted their previous dinners, each one a unique journey through flavors and presentations.

A Feast for the Senses

The evening’s menu was a testament to Chef Stine’s versatility and deep understanding of flavor profiles. Each course was thoughtfully prepared, reflecting both the season’s freshest offerings and the couple’s personal tastes. Using his favorite dishes from the homeowners’ collection, Chef Stine created a beautiful palette of options for us. The ambiance was intimate, with soft lighting and a beautifully set table, allowing the food to take center stage.

Our evening kicked off with a trio of stunning starters, each dish setting the stage for an unforgettable culinary experience. First up, delicate Mushroom Skewers – kissed with a fragrant pistou and a luscious balsamic reduction – elevated by a bold touch of espelette and Calabrian chile. A simple yet striking bite to awaken the palate.

Next came one of our personal favorites – Wagyu Sashimi – meltingly tender and draped in a rich yakiniku sauce, paired with smoky Bacon Fried Rice and a tantalizing burst of yuzu and jalapeño reduction. The combination was nothing short of luxurious, balancing deep umami with a citrusy kick.

The final act of our starter trio? Coxinhas, golden and crispy with a Yukon potato crust, encasing tender confit chicken infused with the warm, aromatic spices of vadouvan. A velvety red pepper remoulade added just the right amount of tangy heat, making each bite utterly addictive.

Just as we thought we had reached the peak of indulgence, the Winter Salad arrived—a refreshing contrast to the bold starters. Crisp mixed greens intertwined with shaved fennel, kohlrabi, and green apple, all delicately dressed in a bright lemon and mint emulsion. A sprinkle of pecorino and micro cilantro brought a savory depth, proving that even a salad can be a showstopper.

From the very first bite, it was clear—this was no ordinary meal.

As if the evening couldn’t get any more indulgent, the main event arrived—a masterpiece of flavor and craftsmanship. The Stuffed Free-Range Chicken was nothing short of spectacular, packed with handmade sausage that brought a rich, savory depth to every bite. Bathed in a silky white wine sauce, infused with the brightness of fresh basil, Calabrian chili and sorrel, this dish danced between elegance and comfort.

But the real masterpiece? The 2-Potato Mille Feuille—a stunning, layered creation where velvety mashed sweet potato and buttery, golden mashed potatoes alternated like the pages of a decadent novel. Each forkful was a perfect harmony of sweet and savory, creamy and crisp. As a potato-lover, we really enjoyed the artistic display of the mille-feuille.

And just when we thought we couldn’t possibly eat another bite, dessert arrived to remind us that there’s always room for something sweet. A flawlessly torched crème brûlée, its caramelized sugar top cracking with the perfect tap of a spoon, revealed a luscious, vanilla-infused custard beneath. Fresh berries and mint added a burst of brightness, elevating this classic dessert into the perfect, dreamy finale.

From start to finish, this meal wasn’t just dinner—it was a journey, an experience, and a celebration of bold flavors and expert execution. “I want my clients to look back and taste the experience, not just the meal,” Chef Stine joked.

Redefining Fine Dining

This experience offered a glimpse into Denver’s burgeoning underground culinary scene, where private chefs like Chef Stine are redefining dining by bringing gourmet experiences directly into clients’ homes. This movement is characterized by a focus on personalized menus, intimate settings, and a departure from traditional restaurant dining that has become popular following the COVID-19 pandemic.

Several other chefs are making significant contributions to this vibrant scene. Chef DeAndre Smith, known as Chef Cool Dre, specializes in Southern comfort, Cajun, and Vietnamese cuisines. Chef Pacc, who has perfected the art of plate combos is well known for his custom event catering where he curates special menus depending on the clientele. Chef Le Bama who aims to spread love and respect through a shared appreciation for food, is well-known for serving gourmet fusions that are a byproduct of his global experience.

Our introduction to this community of private chefs began two years ago when colleagues from Colorado Companies to Watch invited us to one of Chef Stine’s private business networking dinners. Held in the historic Johnson & Wales culinary campus off Colorado Boulevard, the evening featured a five-course pasta tasting menu that showcased Chef Stine’s mastery of Italian cuisine. Each course was paired with carefully selected wines, creating a harmonious and memorable dining experience.

Chef Stine’s relationship with his clients goes far beyond the kitchen—it’s personal. Polaroids of him covered the family’s refrigerator, a testament to the countless unforgettable meals he’s crafted in their home. With a grin, he boasted about how much his clients adore him, and it was easy to see why. His warmth, attention to detail, and ability to tailor each dining experience to their tastes made him more than just a chef—he was a cherished part of their lives, turning every meal into a celebration. “The best compliment I get isn’t just a clean plate, it’s when clients ask me to come back. That’s when I know I’ve turned a meal into something unforgettable.”
