Owner Andrew Casalini, self-described as “wild,” has a long beard and mustache, a beanie and a passionate look when describing his deep love for Satchel’s on 6th. He has been a small business owner since 2005, opening his first Satchel’s, named for his youngest son, in the Park Hill neighborhood serving fine cheeses and Italian coffee. He then experimented with brunches, explored more robust menu items and quickly outgrew the space. He moved his business to 6th Avenue in 2011 and has been a neighborhood staple ever since.
This intimate red brick restaurant is covered with his wife’s art, red leather booths and crystal chandeliers. It beckons an old school vibe complimented by Louis Armstrong playing on the record player. A smoker often seen outside is a primary flavor at Satchel’s on 6th, even smoking butter for the latest Southern Smoked Pork Chop. The menu rotates seasonally, although it sticks to principle items with inventive and imaginative flair. He uses tastes from different American regions and combines them to create a unique taste from Black Garlic Brussel Sprouts with hummus and brown butter to Morel Pasta with foraged mushrooms and spring onion sherry cream sauce. Head chef and owner, Casalini is currently debuting spring flavors using local fresh ingredients like foraged miner’s lettuce and lavender tangelos.
He started his gastronomic career and love for fresh foods as a produce buyer where he met local Colorado farmers which sparked his passion for his succulent dishes. The menu may be a foodie’s dream, but always offers the neighborhood favorite, the Satch Burger with duck fat fries.
Casalini describes Satchel’s as “light-hearted and high-energy… we want to be who we are and want everyone to be comfortable.” Sincerely an inviting familiar ambience that keeps the community top of mind and coming back for new foods and libations.
Casalini’s son Sage is often seen running the front of the house, while his siblings also contribute to the family feel helping where they can. The cocktail menu, while also rotating, has cleverly named drinks after residents of the neighborhood – Bridget’s Walk – a white Negroni with Suntory Roku gin, Italicus, and Dolin dry vermouth was named for a neighbor who walked to Satchel’s regularly for a nightcap. Also, the Heavy Duty, named for a lawyer friend who lives blocks away, consists of Four Roses bourbon, Campari, and sweet vermouth. Wine is also a big seller, with the staff ready to make any pairing suggestions based on the latest flavors.
