Rebel Restaurant Returns with a Pop-Up Dinner at The Bindery

The doors may have closed on Rebel Restaurant’s physical location earlier this year, but the restaurant will return for a one-night-only pop-up. On January 24, at The Bindery, in conjunction with Colorado 2018 Chef of the Year Chef Linda Hampsten Fox, the pop-up will bring Bo Porytko and Dan Lasiy of the Rebel Restaurant together for the one-time collaboration. With a “his and her approach” to the craft, the chefs will present seven courses, each with two interpretations of a seasonal ingredient hand-selected by food editors across the city.  Additionally, The Family Jones Spirit House is set to provide custom cocktail pairings throughout the evening.

Rebel restaurant officially served its last meal on August 4 of this year, with owners and chefs Porytko and Lasiy citing the ongoing construction on Brighton Boulevard as one of the reasons for the acclaimed restaurant’s closure. While open, Rebel restaurant left a legacy of embracing conscious consumption and keeping the craft interesting through innovation and aptly breaking the rules.

The price for the seven-course meal is $109 a piece and can be found here. Regular admission includes multi-course, pop-up style dinner. A welcome cocktail is included. All other alcohol and cocktail pairings will available for purchase separately.
