Continuing the trend of restaurant shuffling that’s defined Denver’s dining scene as of late, Bo Bean and Arisa Chanchokpong will open Aloy Modern Thai in the former Trillium space at 2134 Larimer Street. The sisters relocated from Bangkok, Thailand to Boulder, Colorado in 2006 with their mother Kim, and have helped open and run Aloy Thai in Boulder ever since.

While family recipes are the focus of the sister’s Boulder restaurant, Aloy Modern Thai will highlight contemporary Thai cuisine—food that the sisters’ claim will be lighter, fresher, and healthier than other Thai offerings in Colorado. Bean and Chanchokpong spent several months in Thailand to find Bangkok’s most innovative, progressive chefs, and have brought them straight to Aloy Modern Thai’s kitchen.

In addition to the modern flavors of today’s Thailand, the restaurant will highlight Colorado-grown food, beer, and whiskey.

Aloy Modern Thai opens on February 1 and will be open daily for lunch and dinner, and will feature a happy hour every day from 3-6 p.m., and a weekend brunch from 11 a.m.-3 p.m.
